About this procedure
Purpose
Get the café ready to welcome guests, the same way every morning.
Scope
Applies to both example cafés, every opening shift.
Responsibilities
The opening manager leads the checklist; team members complete their assigned areas.
Steps
  1. Unlock the front entrance and turn on the lights.
  2. Read the notes left by the closing manager.
  3. Turn on the ovens, grills and display equipment.
  4. Count the starting register drawer and write the amount on the opening sheet.
  5. Walk the dining room: set the tables and check that the restrooms are stocked.
  6. Review the day’s reservations and specials with the team.
  7. Unlock the doors when the manager confirms the team is ready.
Exceptions
If equipment does not start or a team member is missing, call the manager on duty before opening.
